Welcome back to IT COOKS! This is episode sixteen! I AM BACK! Woohoo! After a long (too long!) hiatus due to medical issues, It Cooks returns with Fruity Pebbles Cheesecake! This week’s sponsor is Subculture Corsets and Clothing.
For the crust:
3 cups Fruity Pebbles™
2 tablespoons melted butter
For the cheesecake filling:
2 8-oz packages cream cheese, room temperature
½ cup sugar
1 cup Fruity Pebbles™
Preheat oven to 350 degrees. Crush the cereal for the crust into course crumbs (DO NOT POWDER IT!) and place in a greased pie pan or spring form pan. Pour melted butter over the crumbs and work to combine before pressing the mixture into a crustlike shape.
Beat cream cheese on high until smooth and fluffy. Add sugar and beat to incorporate. Add eggs one at a time and beat until smooth. Stir in the cereal and pour into the crust. Bake 30-45 minutes or until it jiggles only slightly in the center. Chill. Garnish with a drizzle of sweetened condensed milk and a sprinkle of Fruity Pebbles™!
